Mamaw Cat's Southern Corn Bread NEW

1 cup corn meal
1/4 cup flour
3 tsp baking powder
1/2 tsp salt about
1/4 cup bacon drippings
1 egg
1 cup milk

Mix all together and put in a greased hot iron skillet. Bake 450 degrees for 20 minutes.

Canning Quick Breads

I do this with quick breads, but have never tried with yeast breads. For quick breads, grease pint size wide-mouth jars, Fill half full with quick bread batter, bake on cookie sheet in 325* oven, remove jars one at a time, careful, they're VERY hot, add canning lid and screw band tight, let cool on a towel on your counter without disturbing. Will keep 6 months to one year.

Best Ever Banana Bread

1 3/4 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 ripe medium bananas, mashed (1 cup)
1/2 cup vegetable oil
1/4 cup plus 1 Tablespoon buttermilk
1 teaspoon vanilla extract
1 cup chopped walnuts (optional)

In a large bowl, stir together flour, sugar, baking soda and salt. In another mixing bowl, combine eggs, bananas, oil, buttermilk, and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. Pour into a greased 9in. x 3in. baking pan. Bake at 325 for 1 hour and 20 minutes or until bread tests done. Cool on wire rack. Yield: 1 loaf.


Whole Wheat Bread

I adapted this recipe from a 1930's depression era cookbook.  This is the lightest whole wheat bread I have found to date (ie. Not your typical lead brick).

3 Cups             piano coversm Water,~120 degrees
1  1/2 Tbs.        Yeast
1/4 C.               Honey   
1 C.                  Powdered Milk
4  1/2 C.           Whole Wheat Flour
1 Tbs.                Salt
1/4 C.                Oil
White flour for kneading

In a large mixing bowl, combine water, yeast and honey, stir until yeast dissolves.  Add powdered milk and all the whole wheat flour.  Stir until well combine and dough is smooth.  Dough will be very wet and sticky.  Let rise 1 hour.  Beat down dough (isn't this fun), add salt and oil.  

Turn dough out onto a well floured work surface.  Knead for 10 minutes with white flour (you will use about 1/2 cup).  Dough will remain very soft and sticky.  Divide dough in half and place in 2 well greased loaf pans.  Bake at 350 degrees for 1 hour.  Cover the last 15 minutes if tops are browning too quickly.  Cool in pans 10 minutes.  Then turn out of pans, and cool on wire rack.  Makes 2 loaves.  Recipe can be doubled.

Monkey Bread

Mix together:  

1/2 Cup sugar
1 teaspoon cinnamon

Use 3 packages of refrigerator biscuits, or 2 loaves of frozen bread dough, or make your own bread dough.
Cut dough into 1 inch balls.  

Roll in cinnamon sugar mixture and layer in a greased bunt pan.  You may add raisins, but try to make sure they aren't touching the pan or in the air on top.

Pour remaining sugar mixture into a 1 Cup measure.

Add:

1 teaspoon cinnamon
Fill the rest of the 1 Cup measure with sugar.
Melt 1 stick of margarine or butter and mix with the sugar.  Spoon over the top of the bread.
If you are using bread dough, allow it to rise in a piano coversm place until double in size.

Bake at 350 degrees for 30 minutes.
Cool 5 minutes and remove from the pan to a serving plate.
